Chicken Enchilada Soup was great. Had it for lunch yesterday too. The Muffins were the perfect creamy counterpart to the semi-spicy, warm soup. Planning to take that tomorrow to work.
Provencal beef Stew was also really good. I added about twice as many carrots as they called for since I like carrots. I also used sliced Shitake Mushrooms instead of button mushrooms which I think added to the flavor. I REALLY do not like Button mushrooms. Also, as usual when I cooked the onions, mushrooms and garlic, I de-glazed the pan with a little bit of red wine. The thing that makes this recipe is the pureed beans which thicken the sauce. To help that along, I also left the top off of the slow cooker while I cooked the rice. If I had to do it all over again, I would not have made the rice and would have had bread instead.
